Cara Operations Ltd

Cara Operations Ltd., the parent of Swiss Chalet and Harvey's and also the largest airline caterer in Canada, is focused on building on its present reputation and establishing new brands to the company. The company reported sales of $1,194 million in 1997, up by 8.8% from the 1996 sales of $1,097 million. With 1,600 units in the food industry's sectors of fastfood, airline catering, contract catering and health care, the firm has made a good year in 1997, mainly due to the appointment of Gabe Tsampelerios as president and CEO. New focus and a restructuring helped Cara Operations improve its synergies.

Hospitality operators across Canada are competing hard to attract and retain qualified employees because of labor shortage. While hospitality colleges attempt to gear curriculum to the demand of the marketplace, they are unable to supply talent that can meet the quality and volume needs of foodservice establishments. To address this problem, operators provide the necessary training for their employees and offer them incentives that include competitive pay, benefits and reasonable working schedules.

The concept of the "Rainforest Cafe" has arrived in Canada from the US. The Elephant and Castle Group Inc. recently opened the first hyper-themed restaurants in British Columbia. The company is also planning to open more units in Toronto and Montreal. The Rainforest Cafe posts an average of $12 million in single unit sales. The company's location in Orlando, Florida produces annual sales of $30 million. The Rainforest Cafe entails an ecological and tropical theme.
