Restaurant operators are creating their own staffing models to recruit, develop and retain valuable employees. These next-generation workers, who are ambitious, well-educated and entrepreneurial, place career above all other considerations. To deal effectively with its staff, White Spot Restaurants, for instance, monitors issues of importance to its employees by conducting annual survey. In the case of Jack Astor's, the issue of incentives has been a constant factor in the chain's recruitment process.
