A former Scottish oyster and seafood suppliers' desire to service high quality meals in comfortable surroundings has helped Lock Fyne Restaurants to grow to 2 outlets between 1990 and 2000. Managing director Mark Derry believes the secret to the success of the restaurant chain is its demanding training programmes for staff and the extremely high quality of the seafood served in beautiful surroundings. Future expansion programmes will be funded by the raising of 3.5 million pounds sterling in shares.

Treasure Island

Mirage Resorts' $450 million Treasure Island casino/hotel/entertainment resort on the Las Vegas strip has been operating since 1993. It covers 18,000 sq ft, and has attractions including 2,270 slot machines, eight restaurants, shops and video games. The resort is tasteful, and its restaurants and shops offer good value for money. It has a single theme running throughout all the attractions, making merchandising part of the whole experience.

Leisure centre operators may benefit from reassessing the ice cream products they stock. It is worth offering products in a high price range, as people often visit leisure centres willing to spend a considerable amount of money, and will probably not be concerned about the cost or healthy eating considerations. When not subjected to adult pressure, children often choose products which are more expensive and are actually aimed at adults.
