For the love of chicken

Article Abstract:

Canadian restaurants, particularly the fast-food segments, feature chickens prominently in their menus because of Canadians' love for the poultry. Statistics provided by the Chicken Farmers of Canada indicate that the per capita consumption of chicken for 1999 was 27.9 kg. Other factors driving the popularity of chicken in restaurant menus are its lower cost, versatility and as a healthier, lower-fat alternative to pork and beef. The three hottest ethnic flavors are Italian, Mexican and Asian.

Top of the food chain

Article Abstract:

Canada's top five burger chains are competing hard to attract customers who consume around 1.3 million burgers each day, or 461 million annually. These five chains, namely McDonald's Restaurants of Canada Ltd, Burger King Restaurants of Canada Inc, Wendy's Restaurants of Canada Inc, A and W Food Services of Canada Ltd and Cara Operations Ltd's Harvey's, had combined sales of C$3.43 billion in 1999. Some of the marketing strategies employed by these chains include updating decor, logos and signage, streamlining kitchen operations, expanding into less traditional sites, and co-branding.

Breakfast, considered the day's most important meal, is skipped by 13% of Canadians, while 83% prepare their own food, and 4% buy breakfast in restaurants. The fastest-growing area of the food services industry is breakfast, and customers want convenience foods.
