True to their roots

Article Abstract:

The boom in vegetarian foods can be attributed to the large number of vegetarian options available in foodservice segments, quick-service menu staples, independent and chain vegetarian restaurants and tasty vegetarian menus. Diners are also becoming more conscientious about their food choices while selecting or substituting vegetarian items in their menus, thus boosting the sale of vegetarian foods.
