Where there's smoke, there's ire

Article Abstract:

Restaurant outlets based in Toronto, Ontario, will be among the establishments that would be greatly affected by a proposed bylaw seeking a smoke-free megacity by 2001. Hearings were set for May 1999 and the proposed bylaw is slated to pass to the Board of Health in Jun 1999. The Ontario Restaurant Assn is already preparing the restaurant industry by cooperating with local engineering specialists to design ventilation systems that will offer an indoor air-quality standard comparable or better than the air outside.

Great grilling

Article Abstract:

Canadian restaurants have adopted grilling as integral part of their cooking processes. Chefs have developed innovative menus that feature the unique flavors of grilled and flame-roasted ingredients. The trend has been partly attributed to technological advances in grillling equipment such as the radiant grills which employs radiant heating, reducing flareups and allowing more delicate, refined on-grill cooking.
