The cuisine of Cyprus historically is heavily influenced by that of Greece and Turkey. Wild greens are often used. Recipes offered are Erinia's ravioli, kofte made with ground pork, scarfa pork with raisin and cinnamon sauce, yogurt balls seasoned with fennel, and Persian pickled garlic.
