Article Abstract:
Seven venerable American restaurants are visited in an attempt to understand what constitutes a classic American restaurant. Durgin-Park and Locke-Ober Cafe in Boston, Joe's Stone Crab in Miami, Peter Luger in Brooklyn, Delmonico's in Manhattan. The best restaurants are the ones like Galatoire's in New Orleans which are able to maintain its history and to be influenced by the present.
