A blind retrospective tasting of an older vintage is a good way to examine how wines age and recommend when the wines are at their peak. A blind tasting of the 1995 California Cabernet reveals that red wines from this star vintage are aging gracefully in 2005, while several of the other bottlings have the potential to last another 15 years.
