Braising is an underused and underappreciated cooking method, perhaps because it is time consuming, but few methods prepare foods better. Included are recipes for marinated eggplant with mint, shoulder of lamb cooked seven hours, mushroom ragout, broccoli with pearl onions, and chocolate waffles.
