Article Abstract:
The US is the world's largest dairy products market with total sales of $29 billion in 1995 and recorded sales of 27.8 million tonnes. Germany is second place with sales of 5.9 million tonnes. A report published by Euromonitor on the eight major dairy markets shows that cultural differences affect consumption of various products. Cheese in European countries and Canada is very popular and milk is most important to the US, the UK and Spain. The US also has the largest market in chilled desserts, including ice cream, with France second.

What future for probiotic dairy products?
Article Abstract:
The increasing consumer interest in functional foods is prompting food manufacturers such as MD Foods and Nestle to make substantial investments in next generation probiotic dairy products, such as functional yoghurt . While probiotic foods are very popular in the Asia Pacific region, consumers in Europe are more wary about their consumption. Probiotic foods contain active bacteria which are claimed to have health benefits. Europe's functional yoghurt market amounted to $635 million in 1997.
