Article Abstract:

One of three types of wine service is found at many restaurants. Restaurants that have a limited wine selection are apt not to know much about selection, while restaurants with large selections usually have waiters who know wine and can make qualified recommendations. Restaurants in which waiters pretend to know wine, but really do not, can be disappointing.
