Chipotles of the southwest

Chipotle chilies which are smoked red jalapenos that come from Mexico add a taste of south in southwestern cooking, especially to barbecue. Cookbook author Diana Kennedy calls chipotles the 'Condiment of the Decade' for beating out other spices.
