Cholesterol-plugged artery: a teaching tool

Article Abstract:

A method to develop and use a simplified model of a cholesterol-plugged artery for the education of lay people is suggested. The model makes use of a two-to-three pound coffee can with both ends removed, a bag made of yellow felt, needle and yellow thread, red enamel spray paint, six soft foam balls and paper-type material that can be cut into tags and sewn onto the balls. The teaching tool is designed to demonstrate the effect of a handful of factors linked to food and exercise which can raise blood cholesterol.

Reflections on marketing as an inappropriate model for nutrition education

Article Abstract:

Marketing concepts are inappropriate tools for promoting nutrition education. The use of marketing concepts in nutrition education fails to provide adequate avenues for effective discourse between marketers and their audience. Moreover, marketing concepts fail to encourage intellectual development and focus on addressing consumer's desires. They are also contradictory to the objectives of nutrition education and pose majorsocial and ethical challenges.

Our perspective: nutrition education enhances food assistance programs

Article Abstract:

Nutrition education plays an important role in food assistance programs. One program that has benefited from nutrition education is the Supplemental Nutrition Program for Women, Infants and Children (WIC). The WIC nutrition education component aims to help participants learn the reason why they have been classified as 'nutritionally at risk' and how supplemental foods will help them meet those risks.
