Six attractive, low-fat main dishes are presented. Ways to lower dietary fat are discussed, including substituting lemon juice or wine for cooking oils and butter called for in older recipes. Low-fat milk can be substituted for whole milk and aged cheeses require smaller amounts because of their intense flavors.
