Old bubbles in new bottles

Article Abstract:

A second fermentation in the Champagne bottle is induced by the addition of fresh yeast and sugar to already fermented wine, which makes it more prone to problems and also the juice is made from is drained off the skins quickly and therefore it does not include the natural preservatives present in grape skins. Hence, carbon dioxide generated in Champagne creates pressure that keeps oxygen from getting into the bottle and the lees that settle in the bottle seem to serve as a preservative.

Article Abstract:

An estimated 125 varieties of Zinfandel wine were tasted and its high alcohol content was the one thing that set Zinfandel apart from other wines, presenting a host of potential winemaking problems since only a few yeasts can survive a high-alcohol environment. The tasting did prove that it is possible to make balanced wine even with high levels of alcohol and Geyser Peak's Sandy Lane Vineyard Zinfandel '02 was one of the best in the tasting.

The Maltman's cottage at Bowmore Distillery, situated in the middle of Herbridean island of Islay, owned by the Japanese conglomerate Suntory and its moderately smoky whiskey are discussed. Maltman's and Mashman's cottages are the best places to stay with the price of rooms range from $100 per night for one bed-room with twin beds and $345 for one double and five twin bed rooms.
