Recipes taken from restaurants in the Italian countryside are presented. The recipes include cornmeal cake with honey and walnuts, fish couscous, three-cheese dumplings, veal scallops with saffron and porcini mushrooms, eggplant rolls with mozzarella and ham, and ricotta pie.
