The star anise of China
Article Abstract:
The star anise, long a favorite among Chinese cooks, need not be limited to contemporary Asian cooking. Despite its exotic, licorice-like taste, which makes it perfect for exotic beef, duck, squab and pork dishes, the star anise can be used to flavor up such non-exotic dishes as custards, cakes, cookies and fruit marinades.
