Optimum internal temperature established by sensory evaluation for fish prepared in conventional and microwave ovens
Article Abstract:
A sensory evaluation of fish cookery, specifically rainbow trout and cod, was conducted. The study assessed the eating quality of fish cooked to varying internal temperatures, the effect of the heating method on the fish's eating quality and measured the effect of heating method on cooking losses of the fish. The findings showed that temperature rise meant a decrease in eating quality. The ideal internal temperature for fish cooked in a conventional and microwave oven was established at 55 degrees C. Cod had more weight loss when microwave baked and trout showed similar weight loss in both ovens, but lost more fats in microwave oven.
