Slow Food is an organization started in Italy that focuses on preserving 'endangered' foods by consuming them. The group combines activism with hedonism, sponsoring food festivals and publishing a quarterly magazine. The Ark Project is the group's way of publicizing foods that are threatened by extinction, and in May, a list of American foods to go on the Ark will be announced.
