The UK market for fresh chilled cooking sauces has doubled from 27 million pounds sterling to 55 million pounds sterling between 1994 and 1998. This represents a yearly increase of 19.5%. The factors contributing to the dynamic growth include the relaunch of own-label products, a high-level of product development and involvement of smaller multiple grocery stores. The chilled sauces market, which is grouped into pasta sauces and recipe sauces, accounts for 13% of UK's wet cooking sauces market. Sales of chilled sauces is predicted to grow to around 104 million pounds sterling by 2003.

The industry will be characterized by the introduction of innovative products, including brands with international flavor. The market for pickles, chutney and relishes only increased by 3% percent from 1993 to 1997. 55% percent of the sector's sales is comprised by sour pickles, which increased by 6% since 1993. Th sour pickles sector is divided into the beetroot, silverskin onions and gherkins varieties. The sectors that witnessed market decline were pickled onions, piccalilli and red cabbage. However, multiple grocers, including discount stores, have increased their share of trade by almost 85% in most sectors.
