Protective effect of sucrose and sodium chloride for Lactococcus lactis during sublethal and lethal high-pressure treatments

Article Abstract:

The protective effects of sucrose and sodium chloride (NaCl) on the intracellular pH and membrane protein LmrP of Lactococcus lactis during sublethal and lethal high-pressure treatments was determined so that an insight could be provided into the mechanisms of baroprotection by NaCl and sucrose. Vegetative bacteria are protected against pressure-mediated cell deaths by the accumulation of disaccharides or computable solutes.

Glutathione reductase from Lactobacillus sanfranciscensis DSM2045[1.sup.T]: contribution to oxygen tolerance and thiol exchange reactions in wheat sourdoughs

Article Abstract:

A glutathione reductase (GshR)-deficient mutant of Lactobacillus sanfranciscensis DSM2045[1.sup.T] is used to determine the functional characterization of a GshR in lactobacilli. It is indicated that GshR activity of L. sanfranciscensis contributes to the beneficial effects of sourdough fermentation on bread texture.

Proteomic approach for characterization of hop-inducible proteins in lactobacillus brevis

Article Abstract:

The mechanisms of hop resistance of beer-spoiling Lactobacillus brevis TMW 1.465A on the poteomic level is studied by using innovations in available databases and analytic instrumentation. The results of this study will be useful for detection of beer spoilage lactobacilli and the preservation of beer.
