Pork, lamb and offal

Article Abstract:

Sales of red meat in the UK have been declining for several years, with a major factor being consumers' preferences for convenience foods. Sales of pork fell around 8% between 1993 and 1998, with the market valued at some 734 million pounds sterling and having a volume of 210,000 t. Lamb and mutton sales declined 10% during the period, from 799 million pounds in 1993 to 720 million pounds sterling in 1998, with volume falling from 200,000 t to 159,000 t. Offal sales have fallen by just over 40% in value and volume from 78 million t in 1993 to 52 million t in 1998. It is expected that sales of pork, lamb and offal will continue falling to 2002.

Article Abstract:

The UK beef market is forecast to grow from 1,577 million pounds sterling in 1998 to 1,631 million pounds sterling by the year 2002. The market will be driven by consumer preference for red meat and a growing trend towards different cooking styles which incorporate beef as a main part of the ingredience. Red meat sales fell from 3.5 billion pounds sterling in 1993 to 3.1 billion pounds sterling in 1998, as food scares and a rise in the number of vegetarians impacted on the market.

In 1995, sales of red meat totalled 3.2 billion pounds sterling, representing a 15% drop since 1991. Volume sales totalled less than 900,000 tonnes.
