Food scraps to composting ... and back to food

Article Abstract:

The University of New Hampshire (UNH) in Durham has closed the loop on food scraps for recycling with more than half a million pounds of food residuals diverted from dining facilities, coming back to the dining hall as vegetables grown using the compost of the residues. The primary objectives of the program are to manage waste in an environmentally friendly and sustainable manner, to beneficially use the organic waste to create a quality soil change, and to increase awareness of the food cycle.
