The Argentine paradox

Article Abstract:

Argentinians eat about 30 pounds more beef and veal per capita than Americans, yet their frequency of heart disease is the same. Argentine cattle are leaner, due to their diet of high-protein grass. The beef ends up with a richer flavor and less marbling. A shopping guide is included.

Most novices think that beluga caviar is the best, but the lesser-known sevruga and osetra caviar are tastier and cost less than beluga. Good caviar is best enjoyed without accompaniment. The three different types of sturgeon from which these eggs are obtained are discussed.
