Those who love French wines but do not appreciate Italian wines may feel that way because the French winemaking process is unique. French vintners age their wines in small oak barrels, which lends a hint of vanilla to the wine. Italian cooking is also discussed.

Article Abstract:

Dirt and its biodiversity account for the differences in grapes and thus the differences in wines by region. Lessened biodiversity will lead to less distinctive wines. Growing the same crop in the same place over many years robs soil of its diversity.
