Wine accompaniments to classic entrees are recommended. Perrier-Jouet Grand Brut NV Champaign maintained its flavor with fresh black caviar on black bread with sour cream and lemon. Recipes are included for Poached Salmon and Celery Nage, Cabbage Saute, and Hazelnut Bread.
