A beginner's guide to the cheese counter

There are hundreds of varieties of French cheeses, although experts say that the choice should not be too overwhelming for the consumer since there is much that can be told about quality from studying the rind. When sampling cheeses, stick to around five selections and taste both mild and pungent smelling varieties.
