Beets are rich in folate, a natural substance whihc aids in preventing certain birth defects, and heart disease. Fiber, Vit C, also Mg, Fe, and K are found in beets. Tips are offered on selecting, cooking and storing beets. Recipes for three summer beet dishes include borscht, and two salads.

Superfood: watercress

Article Abstract:

A cup of watercress contains high levels of the cancer-fighting chemicals sulforaphane and indole-3-carbinole, as well as vit C, calcium, phosphorus and magnesium. This same amount of the greens has no fat and contains only four calories. Several tasty ways to serve watercress are suggested.
