Fusion cuisine

Article Abstract:

The UK restaurant sector can look forward to a positive future, but it will have to make changes in order to ensure that it attracts leisure spending. Growth areas within the sector will include the 45 to 54 year-age range and facilities for families. Entrepreneurship still has a significant role to play in the restaurant sector, as highlighted by the success of YO! Sushi, which uses automation to facilitate customer choice. It is likely that there will be more negative planning decisions on out-of-town standalone restaurants in 1999.

Bigger portions

Article Abstract:

The UK restaurant industry continues to see strong growth, fuelled by trends including a rise in the proportion of women in full-time employment and growing media coverage of food and drink. Market-leading brands are now setting very high quality and service standards, but are also meeting customer demands for value for money. It is likely that successful restaurant concepts will become increasingly focused on specific customer groups, such as young professionals or older people.
