Between the buns

Article Abstract:

Standards in choosing beef that is used for making hamburgers are presented. In Canada, the best hamburgers are made from beef that is bought from federally inspected plants that slaughter youthful cattle. Meat that is cut from grade A or better is often used due to its quality. Another standard suggests the use of whole-muscle single source beef, which involves the use of a specific cut of meat.
