Sour power: Boutique vinegars have all the character of fine wine
Article Abstract:
Artisanal vinegars made from wine grapes and with the same process as boutique wines are becoming the secret ingredient used by professional chefs to add punch and flavor to a dish. Artisanal vinegars that come from France, Italy and Spain can be used in the preparation of a variety of dishes including seafood, salads, fruit desserts and braised meats.

Lovers of spirits are discovering the pleasures of top aged rum, such as Don Q rums from Destileria Serralles in Puerto Rico. The molasses-based spirit is often best when double-distilled in copper column stills. A history of rum is also provided.
