Three-star Michelin winners and losers

The 1993 edition of the Michelin Guide gives three stars to Pierre Gagnaire in St.-Etienne, France. Moulin des Mougins near Cannes, France, lost its third star because of a downturn in quality. France now has 19 three-star restaurants.

Recipes are given for roasted turkey breast with Port wine gravy, braised fennel with fresh figs, herbed pancetta and chestnut dressing, green beans with spices and pumpkin gingerbread. Several accompanying wines are recommended.
