Enhancing compliance in the Child and Adult Care Food Program using digitized photographs

Article Abstract:

Digitized photographs of nutritional food can be found in the booklets distributed by daycare providers in Colorado. The booklets are used to promote the USDA's Child and Adult Care Food Program. The digitized photographs can be improved if more time is spent in experimenting with contrast and brightness. The digitized photographs should also vary in size, and the grayscale halftones should be enhanced. Other improvements in digitizing can be achieved through increased precision in formatting and layout and through photocopying copies of laser-printed computer output.

How to be really safe from food poisoning

Article Abstract:

An educational material designed for food safety education among low income parents is presented to prevent increasing incidence of foodborne illnesses and food poisoning. The interactive teaching-based module focuses on three food safety concepts which include adequate food cooking, maintaining food temperature and preventing cross contamination are taught using various educational strategies and audio visual materials.

Virtual snack shop: an Internet project with emphasis on food sources of vitamins and minerals

Article Abstract:

A professor describes the Virtual Snack Shop, a Web site produced by the University of Delaware that lists all food sources of vitamins and minerals. Nutrition students can submit a snack to the site if it is not already listed but the snack must meet certain nutritional requirements.
