A sea change: from yesteryear's scraps to the seafood delicacies of today

Article Abstract:

Tastes in fish recipes have changed and now allow delicacies from skate, squid, whiting, hake, and grouper. It is a culinary challenge to alter recipes for these rarely consumed species so that no two dishes appear or taste the same. Some unusual recipes include Whiting stew with white beans, butternut squash and chorizo; Tim McNulty's skate wings piccata; Tim McNulty's blackened hake fillets with roasted red pepper sauce; and squid and tortilla casserole.

Sweet beams

Article Abstract:

Optical smoke detectors and optical beam detectors both use infra-red beam detection, but in different ways. In optical smoke detectors, smoke particles scatter the infra-red light source and generate a fire condition, while in beam detectors, smoke blocks the infra-red light path, reducing received signal strength and triggering the alarm. The advantages of infra-red beam detection are further discussed.

Brewing up history

Article Abstract:

T. Carroll Wilson became consultant-archivist to Hills Brothers Coffee after his retirement from the company in 1966. Over the next 25 years, Wilson amassed such a collection of coffee memorabilia that the Smithsonian Institution selected 600 of the items for its archives.
