Spectators at the 1995 New York Wine Experience savored 480 bottles of Dom Perignon champagne valued at about $100,000. Moet et Chandon S.A., the champagne maker, generally lets its Dom Perignon age in contact with lees in the bottle for about seven years.

Benedictine monk Dom Perignon selected the grapes that would make his Champagne by tasting them himself. He is responsible for making the region Champagne what it is today. His winemaking methods and the methode champenoise used today are discussed.
