'Cook right for your health.' (cooking seminar)(includes recipes) (Gem No. 201)

Article Abstract:

The American Heart Assn together with Minnesota Restaurant, Hotel and Resort Assns sponsored the 'Cook Right for Your Health' seminar to help members of the food service staff to gain increased knowledge of new techniques in low fat, low sodium cooking. Seminar participants are given lectures and various education materials on the basic principles of nutrition, dietary guidelines and recipe modifications, aside from being given the actual chance to prepare such recipes. The ways of implementing healthful cooking preparations in quantity cooking are also discussed.

Development of a European travel seminar on nutrition and health policy

Article Abstract:

A liberal arts college based in the Midwest organized a 30-day European travel seminar to increase its student-participants' knowledge of cultural diversity, the cultural role of food as well as European views on health care. The course also provided the nutrition students with the opportunity to develop an appreciation of public health policy by observing alternative solutions in different cultural settings. The seminar and its results are discussed.

Flea market low-fat cooking contest: a strategy for community outreach

Article Abstract:

Middle school cooking clubs can be utilized to promote the preparation and consumption of low-fat food items among families belonging to the lower socioeconomic groups. It is difficult to reach this segment of the population with more conventional means of training. This difficulty was addressed by conducting the competition in a flea market where the event could be more accessible to the target audience.
