Belgium's brew shows its wild side

Article Abstract:

Sainsbury's Belgian Ale is a wine-like, sparkling beer made in Lembeek, near Brussels, Belgium, where it is known as Gueuze. The dry, sweet and sour flavour comes from using unmalted wheat and wild yeasts. Three-year old hops are used as a preservative. Multiple fermentations in sherry casks create flavour. A young Lambik contains residual sugars, so when blended with a three-year old beer a sparkling Gueuze is produced. Fruit versions are also available.

The dry ale has an original gravity of 1050 and uses two strains of yeast. Morland's brewery has existed since 1711.
