Peter Furness-Smith

Peter Furness-Smith is the retail director of Morland, UK brewery, which has opened IceObar public house with the emphasis on drink but also serving food. Trial sites were opened in December 1995 in Sutton and Watford, UK. The public houses offer a variety of beers and lagers to invoke interest in customers. According to Furness-Smith, profit is better than expected and turnover is 300 pounds sterling a square foot. A decision on expansion of IceObars will be based on the results of customer research.

Visitors to the Arena One family entertainment centre in Cardiff, Wales, gain the impression that this is a high quality development offering a very wide range of facilities. The operation is well managed, and appears to be safe and clean. The development has an air of permanence, although it also has the flexibility to be adapted to new trends in leisure provision. Arena One seems set to be successful, as it offers easy access and free car parking, and benefits from a large catchment area.

Modern bars are being designed to welcome female customers who have particular tastes in food and atmosphere. Bar operators are responding to a fall in the number of customers from the 18-24 age-group by adapting to changing needs. The 1990's establishment is equipped with modern surroundings, easy listening music and reading material. The interior design of bars All Bar One and Bar Coast are described.
