Innovations in food processing
Article Abstract:
Large-scale developments in food processing technologies have resulted in the use of non-thermal processing methods as an alternative to the conventional thermal treatment. The use of non-thermal technology processes the food safely with no loss in nutritional value, and the food keeps looking freshly prepared. Various technologies are available of which high-intensity pulse electric fields is the most commonly used and its details are given.
