Improving the utilization of front-line service delivery system personnel

Article Abstract:

A study was conducted to examine two integer programming models for optimal work schedules during shift transitions. The first model defines controllable work variables while another model applies implicit modelling to reduce such variables. Results show that controllable work improved labor utilization. In addition, standard levels of customer service were not affected by employee performance of controllable work.

Restaurant revenue management at Chevys: determining the best table mix

Article Abstract:

The problem of best mix of tables in a restaurant is analyzed in order to maximize the revenue generated. The case study of Chevys restaurant, which has implemented the proposed recommendations of the study on supply mixes to achieve increased revenues is presented.

An evaluation of heuristic methods for determining the best table mix in full-service restaurants

Article Abstract:

The results of an evaluation done to examine the effectiveness of eight heuristic methods, to find the optimal mix of supply in service business with reference to a restaurant with full-service table mix problem, is presented.
