Catering accounted for 39% of revenue earned by leisure venues in 1996, from 36% in 1992. It is predicted that the leisure catering market will grow by 9.1% in value terms at current prices in 1997, with catering accounting for 40% of overall leisure venue revenue. The leading players in the leisure venue contract catering market are Compass Group and Gardner Merchant. Research indicates that consumers are often aware that leisure venues charge high prices for food and drink.
